Breakfast: Don't leave home without it!


Health experts have often cited breakfast as the most important meal of the day. Aside from helping stabilize blood sugar levels, eating first thing in the morning provides you much-needed energy for another busy day.
What's more, a filling breakfast regulates your appetite, making you far less likely to eat that unscheduled snack or overeat throughout the day!
So perk up your family's mornings and make your breakfast an even more filling and fulfilling experience. Here are some simple, economical, but certified mouth-watering breakfast ideas.

Breakfast torta
Ingredients:
2 tbsp cooking oil
4 cloves chopped garlic
1 chopped onion
4 pcs. potatoes, diced
210 g corned beef (e.g. Purefoods-Hormel)
2 tbsp tomato sauce
2 stalks spring onion, chopped
4 eggs, beaten

Cook all the ingredients one after the other except the eggs until the potatoes are fully cooked.
In another pan, over low heat, pour scrambled eggs over hot oil then pour in the corned beef mixture over the eggs.
Cook until top of the mixture is cooked. Makes 2-3 serving.

Potato cakes
Ingredients:
2 pcs. medium-sized potatoes, boiled and mashed
210 g corned beef
salt and pepper to taste
1/2 c all purpose flour
1 c breadcrumbs
cooking oil for deep frying

In a bowl, mix together mashed potatoes, corned beef, salt and pepper.
Shape it into mini-cakes and dredge with flour, dip in beaten eggs then coat it with breadcrumbs.
Fry mini-cakes in hot oil and drain on paper towels then serve with barbecue sauce.
For the BBQ sauce:
2/3 c tomato catsup
1/4 c Cerveza Negra
1 tsp cayenne pepper
1/2 c brown sugar
1/4 c cane vinegar
In a saucepan, combine together ingredients of BBQ sauce. Let it simmer for 10 minutes and set aside. Serves 4-5.
